- How should I store Bad Girl chocolates?
No preservatives are added to our chocolates, so they need to be treated with a little care. They should be stored in the refrigerator. Keep them airtight in a Ziploc bag or in plastic wrap, since chocolates picks up other flavours and smells easily.
They can also be stored in the freezer for longer periods of time. Move them to the refrigerator before bringing them to room temperature to prevent condensation.
All of our products should be served at room temperature.
- How long do they last?
The Caramel Chocolate Almonds, chocolate bars, turtles, peanut butter cups, and jellies will last indefinately in the fridge or freezer. The caramels will last 1–2 months at room temperature.
- What kind of chocolate is used?
Cacao Barry Dark Couverture Chocolate is used in all our products. The Milk Chocolate Gianduja Pyramid also contains Callebaut milk chocolate.
- What is the sliver shimmer on your Hot Chocolate Truffle?
The sliver shimmer is a product called luster powder commonly used in cake decorating. It is tasteless and completely edible.
- Why are they so shiny?
The chocolate is in temper. The cocoa butter in chocolate is made of two different types of crystals. When both crystals are aligned in the same direction, the chocolate should be shiny with a strong snap when bitten into. If the two crystals are not inline, then the chocolate will be cloudy, and won't have a strong snap when bitten into. Tempering requires heating and cooling the chocolate multiple times to very specific temperatures. This is a difficult and time consuming process, but is worth the effort.
- Can you make chocolate at home?
No. While you can aquire the ingredients to make chocolate (cocoa powder, cocoa butter, sugar), the process of making a smooth, rich chocolate takes a number of days, and must go through a process called “conching” which involves large specialized machines mixing the chocolate until it is smooth. This can not be done by hand, or with machines at home.
- What makes your chocolates vegan?
Good quality dark chocolate contains no milk products. The fillings are made with a water or tea ganache, not a cream ganache.
- Are they Kosher?
Sorry, no. While the chocolate used is Kosher, the kitchen where they are prepared is not.
- Why is there soya lecithin in your products?
A small amount of soya lecithin is added to chocolate when it is made to act as an emulsifier.
- I'm on the a low-carb diet. Can I eat any of this?
Yes. Our regular tea or water truffles has approximately 4 grams of carbs each. The Pyramids contain slightly more.
